12 medjool dates
pitted 1 cup cashews
1 1/2 teaspoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon freshly cracked pepper
2 cups mixed dark and white meat chicken, cooked and chopped
1 1/2 cups red grapes, halved
1/2 cup cashews, halved and toasted

In a medium size bowl, whisk together the mayonnaise, sour cream, lemon juice, salt, and pepper. Add the chicken and the grapes and toss gently to coat. Cover and chill for at least 1 hour. For the salad, top with toasted cashews right before serving. For the sandwiches
